Although Manjimup and Pemberton continue to dominate the Australian truffle industry, over the past five years, Denmark, on the state's south coast, has built up a handful of new and emerging truffle producers, reports abc.net.au.
Two are now successfully producing, two more are hoping to start producing in coming years, and recently a fifth farmer has begun putting a business plan into place.
One of the five truffle farmers in the small, regional town is Lexi Carter.
Ms Carter and her partner Dallas Newcomb set their sights on the truffle industry in 2010, looking to move away from cattle.
It has been an extremely difficult business venture for the pair, but things have finally started to pay off.
Their rows of hazelnut and oak trees are just starting to show signs of brules, and it is hoped truffle production will get underway in coming years.
