Emmanuel Schaffner, Verduyn:

“Prices, volumes, quality, demand…all the criteria are being met for a successful cabbage season”

The red cabbage, much like its white counterpart, has been growing steadily since it was introduced in 2008 at Verduyn. “Today, with 10,000 tons of white and red cabbage grown on about 100 hectares, we are one of the largest cabbage producers on the French market. After significant growth, our production stabilized 2-3 years ago. We have now truly found our pace, with specialized partners, supermarkets and wholesalers that are very loyal and regular in their purchases of these products. We are really satisfied with this sector of activity,” explains Emmanuel Schaffner, sales director France at Verduyn.

A market with no shortage of demand
Nothing is surprising about this situation since cabbage is becoming more and more popular. “In terms of outlets, the product is interesting, especially with the rather extraordinary expansion of the Asian wok market in the last 5 years, mostly in the Paris region.” In parallel, the winter temperatures in the last few days have also been favorable for the consumption of cabbage.

The offer is mostly made of large calibers
Regarding the production, this year has also been favorable for the cabbage. “The cabbage yields, much like the carrots, are good this year. The cabbage prices are also quite satisfactory while on the carrot market, a significant drop is observed. Overall, the price variation from one year to the next is smoother on the cabbage market. It does not depend on factors such as packaging which can very quickly disrupt the selling price. The cabbage is mainly sold in bulk. In terms of quality, we are also very pleased. Up until now, we were still on the field cabbage and we have just switched to the refrigerated supply. The large calibers are also more abundant this year than the smaller calibers. We have a lot of 6-piece equivalents.”

A segmented market to value the entire production
The cabbage produced by Verduyn is mainly destined for the French market, but the company has targeted a large number of segments. “We are present on the fresh market, as well as on the processing, canning and 4th range markets. This allows us to value the entire production but also to increase the quality reserved for the fresh market, which brought us a great reputation and a number of very loyal clients.”
