Steam treatment in melons 100 times more effective than chlorine

Currently cantaloupes are treated for E.coli, Salmonella and Listeria strains with washing and chlorine treatments, but a new method may be more effective, according to Dike Ukuku and his colleagues at the ARS Food Safety and Intervention Technologies Unit. His team are using steam to treat them instead, and says it is more effective.



The team showed off the process using a power steamer to clean the cantaloupes by sweeping the spray nozzle across them for three minutes with steam at temperatures of 67 °C. The researchers found that after the steam treatment the melons were found to have pathogen levels 100 times lower than using chlorine.
