Keeping fresh-cut iceberg and romaine lettuce in an optimum state can be a real challenge for processors, with shelf-life often severely limited by oxidation that adversely affects both taste and appearance. A specialist in antioxidants, Food freshly develops solutions that significantly improve the quality and shelf-life of cut fruits and vegetables, including food-safe options that can prevent fresh-cut salad discoloration by up to eight days.
Reflecting a growing interest in pre-packaged fresh produce in the aftermath of the peak of the Covid-19 pandemic, Food freshly has experienced a strong increase in requests for fresh-cut salad solutions in recent months, with producers keen to avoid the typical pitfalls associated with the products. In fact, the discoloration or oxidation of freshly cut produce is specifically prevented by Food freshly’s powdered formulations.

"The focus is on iceberg and romaine lettuce, which pose a challenge for many fresh-cut companies in terms of maintaining product quality," explains Benjamin Singh, Director of Technical Sales at Food freshly. “In these varieties, oxidation can be seen through an unfavorable pink discoloration. Fresh-cut salads are therefore often packaged in a modified atmosphere (MAP) or vacuum to prevent oxidation. With some varieties, however, this is not always possible, and many companies would like additional protection to avoid quality losses and complaints. Food freshly offers this security even without a modified atmosphere.”
A quick dip in a Food freshly solution prevents discoloration of fresh-cut salads for up to eight days. Not only do salad processors not have to use any special packaging to achieve this effect, the solutions will not alter the taste of the lettuce, and perform a lot better than common fruit acids.
