The carrot is the domesticated form of the wild carrot (Daucus carota), belonging to the Umbelliferae family, also called Apiaceae. It is an excellent food from a nutritional point of view thanks to its high content of vitamins and minerals, which also has a higher carbohydrate content than other vegetables.
