PND, a manufacturer of fruit processing machinery, is located in Campania, just a stone's throw from the Amalfi Coast, a paradise where the delicious artisanal limoncello is produced. It is here that the company has installed numerous systems for peeling the 'yellow gold of the Peninsula', i.e., Amalfi lemons. Virginia Cascella, the company's export manager, tells FreshPlaza more about this.

"The line, which is one of the most complete (as the customers are often those who produce the lemons themselves), consists of a brushing machine to eliminate any foreign bodies on the outside of the fruit, merry-go-round belts, and the PL6 peeling machine, which can feature 2, 4, and 8 heads. The peeling machine can process around 60 fruits per minute, and the grade of the peels (which are then infused in alcohol) varies from 1 to 6 mm depending on requirements. The machine is fed manually."

Once peeling is complete, the lemons pass through an optional cutting system, which splits them in half. The process often ends with a very natural squeezing operation, carried out by two belts that extract the organic, natural, and preservative-free juice through gentle pressure.
