Flavorful Brands, a California-based seed company, is encouraging consumers - and by extension producers - to think about cabbage in a different light. The company is behind the KoolheadsTM brand cabbage, which is a white flathead cabbage variety. The company says it differs from that of traditional cabbage as it is considered more tender and sweet. It has also reported increasing production since its inception.
"KoolheadsTM brand cabbages are available pretty well year-round," noted Michael Ryshouwer of Flavorful Brands. "It is currently being grown in southern states, whose season spans from November to April. In May and into June, production moves into the Mid-Atlantic states, before moving further north from mid-July through October. This year, we have increased production since we have really started rolling out the KoolheadsTM program."

What makes KoolheadsTM different to other cabbages
As noted, KoolheadsTM brand cabbages are in fact a white flathead cabbage variety. Flavorful Brands wants to show consumers that these cabbages can be used in more ways than the traditional cabbage that is on most people's minds. For example, the company promotes KoolheadsTM leaves as a wrap for an alternative to tortillas. And because they can be trimmed, another way to use them is as lasagna sheets.

"Like we say: 'This is not your Grandma’s cabbage!' Ryshouwer said. "It’s dependable, nutritious and versatile, tender and sweet with all of the nutrients of its firmer, thicker, rubbery-leafed cousin. They’re in the cabbage family, but we think that we can market them as a more versatile option to the consumer."
With St. Patrick's Day just finished a couple of weeks ago, the company hopes that KoolheadsTM can also become a hot item for that holiday in the future as the category further develops.
Distribution and display at CPMA
KoolheadsTM are shrink-wrapped with a peel open label that has a recipe on the inside, as well as the nutritional attributes, Ryshouwer said. They are packed in 30lb cases on pallets of 35 cases to a pallet. He also shared that KoolheadsTM has been on display recently in New York and visitors will also be able to see them at CPMA in Montreal next month.

"We showed it at the International Hotel & Restaurant Expo in New York where it received favorable comments," he said. "We’ll be showing it at CPMA in Montreal in April. We are gradually expanding KoolheadsTM availability and as a result, Costco Canada has shown interest in them. KoolheadsTM will revolutionize the way we wrap our goodness. Try it, and we think you’ll agree."
