The last winter was the second-driest winter of the last 40 years in Spain. According to data from the State Meteorological Agency, it only rained 45% of the average rainfall there is in winter. It was also a warm winter, as temperatures were 1.5 °C above the average. Now, spring is here and it's been an unstable and particularly cold one.
Producers have already started harvesting white asparagus in Tudela de Duero, but, this year, the asparagus harvest started a little later because of the dry winter. Snow and cold can be beneficial in some cases, but not for white asparagus, especially when it's already starting to sprout. "The main issue was those days in which there were such low temperatures and ice... when the plants had already started to sprout, as that's when they are affected the most," said Enrique Belloso, manager of Asparagus Belloso.
