Freddi Prodotti Ortofrutticoli launches shallot 3.0

"First there was the French produce, then the seed one introduced by the Dutch which changed the market. This season, we launched shallot 3.0. Thanks to research, there are many varieties available but only seed, semi-oblong and round shallot are available on the market. We launched an oblong shallot seed variety," reports Matteo Freddi from Freddi Prodotti Ortofrutticoli.

The produce, which is distributed on the Italian and Spanish market, "is bright pink and with the same taste as semi-oblong shallots, but it peels more easily, almost like an easy-peel. We are also developing a new packaging."

"Our objective is also to provide an alternative to the French shallot, which can cost €1 one day and €2 the next. With this project, we want all operators to be satisfied. If producers are happy, they invest in certifications and machinery, they listen to advice. At the same time, retailers know they will get a high-quality product. In addition, quantities can be planned for all platforms."

"When a product is good, it must be rewarded not only with prices but also with planning. Few do it but, if we don't, we shoot ourselves in the foot." The Italian shallot market is indeed a peculiar one.

"Seed shallot is a niche production that depends on demand. Growers sow only if they are certain they can sell the produce, also because the investment is rather high. And it should be that way, otherwise we risk ending up where golden onions were this year." He is referring to the fact that many sowed this type of onion this year after they saw the interesting prices of last year. Many also set themselves up as onion producers and invaded the market with their produce, driving prices down. 

Freddi also launched the new website, which includes recipes by food blogger Daniela Tornato to cook with onions, Borettana onions and shallot.
