Mexico produces nearly 708,000 tons of cucumber a year

Cucumber is of the most harvested and consumed vegetables worldwide. It belongs to the Cucurbitaceae family and it is a cousin to cantaloupes, watermelons, and squash. It is a summer vegetable, but consumers can buy it throughout the whole year thanks to greenhouse crops, which have proliferated in an extraordinary way.

Consumers can reap the benefits provided by cucumbers in this hot season, as they are refreshing and contain many nutrients. They have low calories, low-carbohydrates, and provide a good dose of fiber and vitamins A, B, C and E. Regarding minerals, cucumbers are rich in potassium, iron, calcium, phosphorus and magnesium.

Cucumber is mainly consumed in all types of salads, thinly sliced and raw, in cold creams or sauces. It is a very refreshing food in the summer time. Cucumbers go very well with blue or oily fish (tuna, bonito, salmon).
