US: Great health benefits mushrooms

Mushrooms are increasingly gaining a Superfood reputation as they contain several health benefits. According to Mercola, a study has shown that substituting red meat with white button mushrooms may support a healthy weight. Additionally, certain types of mushrooms contain optimal vitamin D levels and are more effective than taking vitamin D2 supplements. Mushrooms also support gastrointestinal health due to their supply of dietary fiber and fungal enzymes. Last but not least, mushrooms contain antibacterial properties as penicillin and tetracycline for instance, are derived from fungal extracts.

In spite of the many positive effects of mushrooms, Americans consume a limited amount of types. US mushroom consumption amounts to roughly 900 million pounds per year, but 95 percent is attributable to just one species, the button mushroom.
