Last year he introduced the vegetable chips, or vegetable fries, a product that will be available at Dutch retailers this May. Vegetable fries are made of carrot, corn and beans. It looks like an ordinary potato chip, crispy on the outside, smooth on the inside. Vegetable fries meet all the conditions of the ‘green check mark’. This checkmark is meant for health products with less saturated fat, salt or sugar.
“I’ve had similar ideas before, but never thought of applying for a patent,” says Marc. “For the Vegetable fries we immediately acquired a patent in Europe and America. The development of the product took quite some time. We have experimented with different vegetables. Together with a collaborator I conducted a lot of research and testing among consumers. So finally we arrived at the ideal recipe. We let people taste the fries in local shops and supermarkets and the reactions were very positive."
Besides retail Marc also sees opportunities in the foodservice. "We have already been in contact with various parties in this sector. Retail and food service are still the two most interesting groups. Our goal is simple: Increase consumption of healthy products in children. We also follow the mission of my company Van Hulst and Partners: ‘Improve the world with better food’. Vegetable fries is more than a combination of fries and vegetables. It is a new way of eating."
