The faculty for the program (15 Instructors) represented an International group of recognized experts including top scientists and academic professionals from US, Italy, Spain, and Germany which significantly contributed to the vast success of the Course, with more than 80 participants, from 21 different Countries. About 50% of participants were fresh produce processors, 30% were represented by personnel of R&D Institutions and graduate students, while the rest were suppliers of equipments, materials, and services for fresh-cut processors.
Previous editions of the course where held in Italy (Bari, 2007 and Mesagne, 2010), and in Spain (Cordoba, 2008 and Almeria 2009). The present edition in Berlin was conveniently planned on the occasion of FRESHCONEX/FRUIT LOGISTICA, the world largest event related to fresh-produce and fresh-produce convenience.
The objective of the Course was to provide a comprehensive and intensive review of technology in the fresh-cut industry with emphasis on the critical areas of processing, packaging, and quality assurance, covering issues related to quality factors affecting fresh-cut products, processing, temperature management, microbiological testing, and other safety and quality issues.
Topics covered by the Instructors were organized in three main aspects: related to the product, related to processing, and related to safety.
