Salicornia, a super vegetable ideal for athletes

Salicornia, also known as sea asparagus or sea grass, is considered a super vegetable ideal for athletes because of its high content of minerals, water and proteins.

It is a succulent plant that grows in areas where salt water is concentrated. Its salty flavour and its appearance, as it seems to have small horns, gave rise to its name: Salicornia.

It is a small plant with high concentrations of water, a reasonable supply of sodium, magnesium and iodine, and with a high protein content that can reach up to 30%. Additionally, its seed is a source of unsaturated fatty acids, mainly omega 6, which can benefit health by providing quality energy.

It is also a source of calcium and potassium, minerals that are associated with the contractile function of the muscles and the nervous system, which are essential for the actions of our body during movement.

Sodium, potassium and iodine also contribute to electrolyte balance, which are key to achieving good hydration and prevent cramping or other disorders during or after exercise.

For all these features the Salicornia is an ideal super vegetable for athletes that can be eaten in a salad, as part of a stir fry, or as a sauce for fish or other meats.
