When the American dream comes true - thanks to a citrus peeler

Citrus fruits are not only freshly consumed in southern Italy, as in many other parts of the world, but are also used in other industries. For example, for beverages and cosmetics.

The Italian company PND has been producing industrial machines for decades, destined to international companies operating in the food processing sector and the ready-to-eat fruit sector. 

"The peels, pulp and juice of citrus fruits have many uses. These components are destined for specific industries that convert them into other products," said export manager Virginia Cascella (photo on the right). 

"The ZEST4/ ZEST6 for peeling citrus fruits is a machine that is widely sold. This machine was the beginning for us and contributed to the entrepreneurial success of an Italian American, Phil Mastroianni, who became successful in the Big Apple, precisely with lemons. It seems that our Zest machine contributed to this."

The ZEST peeler can be equipped with 4 or 6 workstations and is very easy to use. From the moment the fruit is placed in the dedicated slots, the peeler carries out the processing on its own. The machine is equipped with a mechanical system that allows to adjust the thickness of the peel depending on the desired outcome.

The thin peel, cut with extreme precision by the peeler ZEST4 - 6, is what is needed to make, among other things, a famous lemon liqueur.

The peels are dried, candied, caramelized, glazed and glazed. In fact, the candied peels can be partially or completely coated with chocolate to serve as a tasty snack. 

The dried peels are commonly used to prepare dishes such as risottos and main courses based on meat and fish. They can also be found as an ingredient for desserts. Lemon peels are also in high demand from the cosmetic industry.
