Harvesting potatoes at night

It doesn't make sense to harvest potatoes in the afternoon or evening - the most important parameter is soil temperature, so the best time is between 5 am and 2 pm.



This is what Alberto Zambon, president of Consorzio di Tutela Patata Bologna Dop, explained during the Notte Bianca della Patata in Molinella (Bologna). 


"The produce should be harvested at dawn, as it's no fun working while it's dark. While it's true that tractors have powerful lighting system, it's still an environment at risk."

Harvesting tubers when the soil is hot could lead to storage problems. The colour risks being compromised as well.
