"Ideal way for growers to do gastronomic product tests"

Sous Fresh is a culinary sparring partner for professional kitchens who want to focus more on the use of fruit and vegetables. "We look for new flavour profiles, concepts and applications. In this way, we help professional chefs. They use these discoveries to make their dishes healthier, tastier, more profitable, and more sustainable", says Sanne Heber, Purchasing Manager at this Dutch company. "One of the tools we use for this is the Sous Fresh Chefs Inspiration Box. Every month about 200 chefs receive such a box. In it are six new or innovative fruit and/or vegetable varieties. The chefs can then experiment with these."



Sous Fresh supplies wholesalers, the food service industry, and gastronomic suppliers. They are on the lookout for innovative suppliers. These suppliers can contribute to the expansion of the brand. "With the Inspiration Box, we have a perfect platform for growers to test unusual fruits and vegetables within the gastronomic arena. There do not even have to be large quantities available. We can introduce these products to our clients and professional kitchens. From there, we can see if the products add value to our brand", says Sanne.


Inspiration Box

"The average fresh produce trader will ask who can supply such a mix of products to their clients. We can. Mini coconuts, cucumber flowers, mashua - whatever you can think of, we have. We started our Chefs Inspiration label with 60 products. We now have an extensive range of 180 products. There are, however, more surprising products that will delight gastronomers, out there. This is why we are looking for passionate growers. They have special products with distinctive tastes, colours and/or inspiration", continues Sanne.



Sea vegetables
"From forgotten vegetables to undiscovered crops; from exotic delicacies to regional seasonings. Fruit or vegetables, greenhouse or full ground. It does not matter to us. As long as it adds to our goal of opening up a world of inspiration to professional kitchens. This is why we started small. For example, we used to have a small sea vegetable range. It has now grown to 20 different products. Chefs who are looking for meat alternatives often chose (salty) sea vegetables. We get these from France and the Netherlands as well as Mexico, Israel and Australia", says Sanne.



"Our all-in-one service provision is tailored to the needs and wishes of the professional kitchens. This starts with packaging. When needed, this is designed entirely with ease-of-use in the kitchen in mind. Several of our vegetables are washed and pre-cut. This makes it even easier for the chefs. This semi-convenience assortment is carefully put together. Taste and freshness have, however, not been compromised in any way", the buyer goes on to say. "This means our function goes far beyond that of a mere supplier. We do not only deliver the products. We also give our clients comprehensive support. This is why we have a high-quality, in-house chef. Our clients get advice about all the possible applications of any particular product. So, we keep surprising, inspiring and stimulating the chefs.
