Poland: New sauerkraut concept 'Brassica' gaining popularity

The new sauerkraut concept 'Brassica' was introduced in 2013. Its creator, Grzegorz Raczkiewicz, explains that five years ago he came up with the idea of marketing additive-free, fresh sauerkraut. "Many others supply sauerkraut, but add various chemicals to it. We were looking for an alternative, and therefore offer a 100% natural product. Our sauerkraut contains no additives, neither is it pasteurised."



Popular in Poland 
"Our sauerkraut comes from Charsznica, in Poland, also called the Polish cabbage capital. Nothing is added which may change its flavour. Cabbage and sauerkraut are very healthy products; during the sixteenth century, the vegetable was introduced in Polish cuisine by Queen Bona, and nowadays, cabbage still has an important place in the country. It even has its own festival in Germany and Poland, in Charsznica. Every year on the second Sunday of September, a special "Cabbage day" is held."



"Sauerkraut has medicinal properties and helps prevent various diseases, from rheumatism to bronchitis. It really is a miracle cure," says the owner. "The product has a shelf life of around three months, and it is best preserved at around 5 to 6 degrees. It is the most flavourful cabbage in the world and reactions at the recent World Food Warsaw fair were very positive. People are enormously enthusiastic about their flavour."



All year round
"Brassica is currently marketed mainly in Poland. We also started exporting and we are negotiating with distributors in the United Kingdom and the United States. We can supply all year round and the product is presented in patented paper pouches. The front is transparent, so the sauerkraut can be seen; it is a format I designed by myself," says the entrepreneur. "It has special holes on the top to allow air out of the package, but not to let it in. Bags are resealable and contain a kilo of the product."
