Russia: Purple potatoes from the Ural region

A new variety of potato, where the colour is reminiscent of a beetroot, was selected for agriculture by employees from the Russian research institute in Ural. The new variety is called 'Tschudesnik' (wonder). The inside of the potato is dark purple but its flavour is really traditional.

The total amount of anti-oxidants in this variety are a lot higher than regular potatoes. The vitamin C levels are five times higher than usual. The new potato will be available for sale in the next one to two years.
