Danny Clark elected president of Mississippi Sweet Potato Council

Danny Clark, of Vardaman, was elected president of the Mississippi Sweet Potato Council during the 42nd Annual Council Meeting last Friday in Pittsboro.
Clark, who will serve a two-year term as the organization’s leader, succeeded Jamie Earp of Houlka. The newly elected board of directors are Earp, Brian Allen, Perry Bailey, Craig Williams, Brad Smith, Justin Wade, Ryan Alexander, Mike Langley, Randle Wright and Tommy Harrison. Brad Spencer will serve as Council Secretary and Benny Graves is executive director.

The guest speaker at the meeting was John Anderson with McCain Foods USA, Inc.
Anderson is the sweet potatoes field manager for McCain. He said Mississippi is the company’s second largest supplier of sweet potatoes behind North Carolina.
“I believe there are a lot of opportunities within the Mississippi market for this product and we want to work with our local farmers to take advantage of them,” Anderson said.

Chef Ty Thames, with Restaurant Tyler in Starkville, presented a cooking demonstration during the program highlighting some of the menu items the restaurant offers using sweet potatoes. “Sweet potatoes are very versatile in cooking, and we get a great response from our customers as a result,” Thames said. Nearly 100 area farmers attended the meeting which was sponsored by Wade Equipment.
