Valérie Opplinger from mushroom company "Un amour de Pleurote"

"Total production consumes the electrical equivalent of two residential units"

At mushroom cultivation farm "Un amour de Pleurote" in Western Switzerland, three varieties share the cultivation spaces: King Oyster, Oyster mushrooms, and Shiitake. "These are mushrooms that are popular among consumers but were not produced in the Romandy region when we started," says CEO Valérie Opplinger to Swissmilk. There are three values that are central to the company: organic production, 100 percent Swiss substrates, and local economy with fair partners.

The mushrooms grow vertically on racks across seven levels. This is to optimize space and resources. Although this resource saving is a challenge for management, it is pleasing from an ecological standpoint. "The building is not very sexy," the entrepreneur admits. "It is a former office area that we equipped with heat pumps and humidifiers. The entire production consumes the electrical equivalent of two apartments and just a little bit of water."
