Kiwi Atlántico, the largest kiwifruit marketer in Spain and one of the largest in Europe, has spent months working on improving the value of this fruit's by-products.
The Kiwi Atlántico R&D department is conducting tests to launch various kiwifruit products with several objectives: the first is to increase the value of current kiwifruit by-products and thus allow producers to obtain better returns. Also, the company is committed to reducing waste and the amount of fruit that is discarded, offering the consumer alternatives that are just as healthy and promoting the circular economy. Lastly, they aim to obtain new products of outstanding quality.
The research into the elaboration of processed products carried out in recent months has led to the creation of various pureed formulations made from ripe and discarded kiwifruits. With this, the percentage of kiwifruits used is greater than 90%, and with no loss of the fruit's properties.
Industrial pureed kiwifruit
Tests are being carried out with these purees by various Galician companies to produce, for example, ice creams with more than 50% fruit content, 0% fat and suitable for vegans. Kiwi Atlántico reports that the private tastings and tests currently underway are yielding very satisfactory results. The idea is to make the products available by the end of the summer campaign.
In addition to healthy kiwifruit ice cream, it may also be possible to manufacture sauces and vinaigrettes based on this fruit.
