Pre-made salad and leafy vegetables still the most popular on the wholesale market

"Standard cut salads still cover up to 90% of our convenience offer"

The convenience sector in the German wholesaling and retail business has seen a rapid rise in recent years. More and more fruit salads, ready-to-cook vegetables and processed raw materials are being made available to wholesalers and private customers. In the wholesale market events, however, one sees more of a current trend: despite the significantly expanded product selection, it is still the sliced ​​salads, which are well received by large consumers and customers within gastronomy.

On the Berlin wholesale market on the Beusselstraße, standard salads and the leafy vegetables continue to dominate events. "Pre-made and washed dressed salads in bags are being used more and more frequently, especially over the last two years. This covers up to 90 percent of our goods turnover in the convenience sector," said Ali Polat, Sales Manager of MK City Frucht LLC, headquartered at the Berliner Frischezentrum.

Specifically corn salad and the Lolo varieties are very well received by the customers. "In my opinion, modern gastronomy simply wants to spend less and less time cutting, washing and preparing salads," Polat explains, adding that time and labor savings are also reflected in customer demand. "What we sell a lot of, are not only large boxes of 800 grams, but also these washed and pre-cut bagged goods in different sizes. Salads are usually sold in 200 or 250g sizes, spinach in 300g bags."

Wares in crates selling best
Although in the meantime also fruit exotics and vegetable rarities are marketed in convenience form, their percentage of sales is rather low. However, this depends heavily on the customer structure, Polat knows. "For example, we primarily supply hotels as well as Italian and German restaurants." Generally the offer at the Berlin wholesale market area is quite broad: "There are meanwhile mini vegetables available, and much more. However, the wares in crates are still selling best."
