Good availability of morels in France

In Haut-Doubs, morels are found on the edge, in the prewoods under the spruces, in the stumps. Each variety is more or less easy to find.

For black morels, the harvest does not seem very good. One farmer says it's even one of the worst years in 30 years: "This year I only picked 250 to 300, some years it's over a thousand," says Gilbert Moyne, mycologist.

Bark morels, on the other hand, have grown like mushrooms: "There has been a significant increase in logging, where the morel has not suffered from drought. The bark morel is later than the black or yellow one," explains Gilbert Moyne.

Depending on the species, black morel, yellow morel or bark morel, the lifespan will be different. "The yellow morel is quite fragile, it must be dried quickly otherwise it will rot," says Gilbert Moyne. "For morels, two to three days on a radiator may be enough. Or a night in a desiccator that removes moisture from the mushroom. If you let your morels dry outside, they will get damaged," he concludes.
