Peeling facility Elsterhof processes potatoes from its own fields

Combination of mechanical processing and manual work

For more than two decades, there has been a potato peeling business on the Elsterhof in Dorn-Assenheim. It actually originated from an acute emergency: In 1994 Karl-Heinz Fleischhauer had a potato harvest that was above average for the time. He could however not place all his potatoes. A potato trader from Dorn-Assenheim then offered him his potato peeling machine. From then on, the Elsterhof developed into a farm with a focus on table potatoes. Over the course of the years, daughter Brigitte Weil and her husband Jürgen have come to run the business.

Only potatoes from their own fields are used, according to the Wetterauer Zeitung. The Belana, Goldmarie, Gala and Anuschka varieties are grown on around 50 hectares within a 15-kilometer radius. They are predominantly firm cooking. "That's what most cooks want," says Brigitte Weil. "You can do anything with these varieties - from making a potato salad to making puree." After the harvest, the potatoes are stored in the yard. Then, packed in wooden boxes, they will get to rest in the dark and cold storage until they are processed.
