Early Adapter in the vegetable sector is constantly in search of something new and surprising

"Red Chinese cabbage is establishing itself at a rapid pace in the Stuttgart area"

In gastronomy, there are always new, trendy products, especially as far as fruits and vegetables are concerned. However, anyone has to recognize these trends first and try to place them in the market. Deniz Sever - owner of Miss Peppas GmbH for more than 6 years - is a so-called early adapter. She is always on the lookout for new and surprising products for her hospitality clients in the Stuttgart area. And not without success.

Italian strawberries of the Lucana brand

Currently, the dedicated dealer from Stuttgart is in a transitional phase. New German products as well as southern European fruits are delivered at the moment. She gives strawberries as an example: Italian and Spanish open field strawberries and Dutch greenhouse strawberries are also available on the market. "In terms of quality, I see no major differences between the different sources, although the greenhouse product, purely optically, of course, is somewhat nicer. The prices are falling week by week and I also think that we will soon come to a standstill or that the prices will bottom out. The prices of Dutch and Belgian strawberries are about twice those of southern European ones. "

The company name contains a direct link to the food trade, but also to its female management. "It should be clear that I work with food and that a woman is behind the company."

Red Chinese cabbage: A hit within Stuttgart gastronomy
Since 2013, Miss Peppas GmbH has been supplying exclusively upscale restaurateurs in the Stuttgart area, and the colorful product range is largely sourced from the local wholesale market. "Trendily, we are more likely to feel a high demand for regional specialties. What is currently selling well is the wild herb salads and cress varieties. In addition to these, red Chinese cabbage is particularly popular: This milder alternative for the bitter radicchio sells very well and I also believe that we can soon market this colorful vegetable to pre-cut companies. I have been buying this product for about 3 years, directly from regional farmers in the vegetable hall on the Stuttgart wholesale market. Last year we were able to extend the season until December.

Right: Colorful cauliflower also sells well in the gastronomy sector.

Furthermore, the trader currently sees a strong longing for old, forgotten vegetable varieties. "I am personally very fond of this trend. No matter what I discover, I bring it around. Although my business is very small, I can easily communicate with my clients. I post something on social media and my clients post what they think. "Mrs Sever sees herself as an early adopter in the vegetable sector: again she gives the red Chinese cabbage as an example. "Now, there are three marketers on the wholesale market who buy this product, and offer it themselves."

Social commitment
Due to the direct proximity to the local wholesale market, the manager is in the position to go to the trading area in person every night and to buy in goods herself. If something should be lacking, she also goes to the wholesale market during the day to be able to fulfil later orders. "I have no inventory and I try to waste as little as possible. That's why we work very closely with several social projects in Stuttgart to get the needy food. That, too, is very important to me," it concludes.
