China: Persimmons colour rooftops orange

Aerial photographs show the village of Quanzhou in Fujian province, where local people are drying this year's persimmon harvest in the open air. Persimmon fruit provides a good business for forty househoulds in the village, who, after the fruit has dried, are selling the product as a snack on the local market. Shui Yuan Chen, one of the villagers, expects to be able to produce 20 to 25 tons dried persimmon fruit.

Mr Chen has installed seven air conditioner units to ensure that if the weather becomes warmer or more humid, he will not lose his persimmon crop. The drying process takes 40 to 50 days, and can be sped up by air conditioning. Persimmon fruit is common and popular in China, and is finding its way to other destinations worldwide.
