The advantage of processing exclusive products

"We are strengthening our presence on the foreign markets, also thanks to new customers," reports Giuseppe Pellegriti, owner of the Sicilian brand Terre di Sicilia, which specialises in pistachio products. "For some lines, we have developed tailor-made formats and products to respond to the specific needs of the H&R channel, and the catering industry in particular. Terre di Sicilia commercialises processed pistachio products. The main ones include pistachio spread, ground pistachios, shelled pistachios, and pistachio pesto, available in both the organic and standard versions. Among the new products being tested is a short-chain basil pesto made with basil, local pine nuts, extra virgin olive oil, Grana Padano, Pecorino, Parmigiano, sea salt, and garlic. The business operates B2B, supplying items to the food, canning, and confectionery industries and to distributors for the H&R channel.

Giuseppe Pellegriti highlights the strategic role of trade fairs, which are useful to stand out in the segment of artisanal processed products. The company will participate in events such as Artigiano in Fiera and Sigep to present a new product. Previous experience in the fresh food sector is an element that facilitates the commercial management of the brand. A strong point is the ability to supply pistachios in all forms for any food application. The aim is to respond to specific customer requirements with a product that is processed with flexibility, and is adaptable and customisable in terms of format and packaging.

Despite the strong competition in the sector, demand for artisanal processed products, especially those based on nuts, is high. This demand is driven by health trends. The company relies on the quality of the raw material and precise control of the supply chain. Attention is also high during the processing phase. Processing takes place in Sicily, in state-of-the-art plants. This is where all the necessary steps take place, including shelling, peeling, chopping, paste-making, salting/toasting, and praline-making.

Festive products are planned for the Christmas period, in particular the classic panettone with pistachio filling.

In recent years, the demand for artisanal organic products has been on the rise, especially abroad. Consumers are showing an increased sensitivity towards environmentally friendly products. This is consistent with the Bio 2030 Manifesto, which advocates an active agriculture to tackle the climate challenge and strengthen the agro-ecological approach. The company promotes territorial development, innovation, and supply chain traceability to promote and make recognisable the Italian organic production.
