New Caulifornia Snow™ riced cauliflower gets traction

“We recently launched a riced cauliflower product Caulifornia Snow™,” says Brent Scattini with Gold Coast Packing. “It’s a versatile product that allows for a variety of uses.” It can be cooked as rice, but can also be substituted for mashed potatoes or pizza crust. “With this product, we offer a healthy and gluten-free alternative,” added Scattini.

“Cauliflower is the new kale,” Scattini continued. It is considered a superfood. “Consumers have become aware of the health benefits of cauliflower and the consumer behavior drove us towards the development of this product.” Although new to the product family, the company notices a tremendous amount of sales and interest for this product already. “Earlier this year, there was a temporary supply shortage, but now our supplies are in line and we’ve taken additional actions to handle the volume,” said Scattini. If you would like to try this product, it is available in both retail and foodservice packs. Caulifornia Snow™ comes in one-pound bags and has a shelf life of 16 days.

The name symbolizes the dry conditions in the Golden State. “As a result of the drought, the state is almost out of water and has much less snow. If we aren’t going to get any rain, we will just make our own Snow.”
