Wild asparagus technically not asparagus

The wild asparagus is here again. The wild asparagus technically isn't asparagus at all; they are the stalks of a hyacinth-like plant. They are always available for a brief period, about 6 to 8 weeks. They're grown in special nurseries in France, and only grow well in warm weather. The young stalks have a delicate green colour and a refined, spicy flavour.
