Chilean grower is looking at colorful potato varieties

Amidst the diverse landscapes of Chile, a culinary revolution is taking place. It is centered around the potato, but not your everyday potatoes. These have vibrant hues of purple, red and gold. Aptly named “Papas Arcoiris,” which translates to “Rainbow Potatoes,” these tubers are redefining the way the world perceives this humble vegetable.

Behind this colorful innovation stands the Contreras family. Papas Arcoiris is a family company, established in 2002 by Boris Contreras Kusch along with his late father, Andrés Contreras. Since 2010 the company has been managed by Boris along with his wife, Anita.

He envisions a potato that transcends its staple status to become a gourmet delight. His vision is not just to create new varieties, but to elevate the potato to a gourmet ingredient, worthy of the finest dining experiences.
