AI sorting and HPP systems expand pomegranate processing chain

As the global pomegranate market continues to evolve, with demand for fresh and minimally processed products, Juran Technologies is introducing updates to its processing systems. Toward the end of 2025 and ahead of the first quarter of 2026, the company is updating existing Arilsystem customers and potential partners on an expansion of its technological offering.

Building on the Arilsystem, two additional solutions are being introduced to extend the processing chain and address market developments. These include AI-based optical sorting for pomegranate arils for the fresh-cut market and HPP (High Pressure Processing) pasteurization systems for pomegranate juice.

Together, these systems provide an integrated approach from whole fruit processing to finished products.

AI-based optical sorting for fresh-cut pomegranate arils uses high-resolution RGB cameras, with optional NIR capabilities, combined with machine-learning algorithms to analyse each aril in real time. The system identifies colour uniformity, defects, foreign materials, and size or shape irregularities to enable sorting at industrial speeds.

The mechanical design includes controlled feeding, reduced drop heights, and dedicated conveyors to limit mechanical damage and maintain aril structure. The system is compatible with different Arilsystem capacities and integrates with separation, washing, and packaging stages, with adaptability to different throughput requirements.

This results in consistent product quality, reduced manual labour requirements, lower reject rates, and improved operational efficiency for fresh-cut processing.

HPP pasteurization systems are configured for pomegranate juice production and aligned with Arilsystem extraction capacities to support continuous processing from aril extraction to juice handling.

As a non-thermal process, HPP maintains nutritional components, colour, and flavour while extending shelf life without the use of preservatives or additives. This includes retention of antioxidants, polyphenols, and vitamins, while maintaining fresh characteristics and supporting food safety requirements.

The system supports processing aligned with demand for minimally processed beverages.

The combined systems provide a processing setup from aril extraction and sorting to juice extraction and HPP pasteurization. The outcome is processed pomegranate products with maintained nutritional content.

The Arilsystem is being developed from a single processing unit into a broader processing platform for pomegranate handling.
