María de Cortes Sánchez, professor of the Department of Nutrition and Food Science of the Faculty of Pharmacy of the Complutense University of Madrid, highlighted how a fruit that can weight more than 300 grams contains a minimum of 13 grams of fiber, so "a single kaki has more than half of all the fiber that our body needs daily to function properly, especially at gastrointestinal level."
One of the conclusions of her study on the kakis from the Ribera del Xúquer is that this fruit "is also interesting because of its content of vitamins, antioxidants and naturally present sugars, such as fructose and glucose, and the very low sucrose content."
Doctor de Cortes recommended including kakis de la Ribera on a regular diet "because of their low sodium content, since sodium is usually very present in today's diet, so including such low-content foods can help compensate for the usual excess."
Another mineral that makes the fruit stand out is copper. This trace element is essential for the body because, among other things, it contributes to the proper functioning of the immune system and to the protection of cells against oxidative damage.
