Broccoli powder to complete your diet

Just 100 grams of broccoli powder provides the same health benefits as 1 kilo (4 servings) of the fresh product, according to a study by the Laboratory of Phytochemistry at the Department of Science and Food Technology of CEBAS-CSIC, which actively collaborates with the +Brócoli Association.



The broccoli powder is obtained by dehydration using either heat or lyophilization; the batch is then quickly frozen and the ice removed by gentle heating in a vacuum. This way, the nutrient content remains concentrated.

In their tests, the researchers have extracted 90-95% of the water, and the remaining concentrate retains 90% of the bioactive components which the product had before going through this process, which means that about 23 grams of powder equal 250 grams of fresh or steamed broccoli. "This substance may be added to vegetable juices or used as a condiment in salads or other foods. It is only in the preliminary test stage, but it is very promising," affirms Cristina García-Viguera, lead researcher of the Laboratory of Phytochemistry.

An ideal supplement to complete our diet
Broccoli powder is already sold as a vitamin supplement in sports and diet centres, due to its high content of vitamin A and C, potassium, fibre, calcium and iron and for being low in fat, calories and sodium. It is also ideal as a complement for the diet of middle-aged people who do not usually eat broccoli three times a week or have a family history of cancer, especially lung, colon, breast and prostate.

"Not all powders in the market retain these properties, given the "aggressive" way in which they are obtained; some do not even contain any bioactive compounds. When choosing a product, you need to verify that they come from a scientific and quality source, such as AQP Ingredients (CSIC)," concludes García-Viguera.
