"The really strong price decrease started on Monday," he continues. Looking back at the year so far, Gijs remarks that it started badly. "This lasted until around week 8. The weeks after that were better. We went from 45 to 75 cents and the price slowly rose to 1.10 last week. Due to the cold in those weeks the demand was higher. Now we are back around 60 cents." He expects the price this week to be around 70 to 80 cents. "On Monday it will be Pentecost, so nothing will be supplied. There should be a good demand on Friday."
Right balance
Last summer went well for chicory according to Gijs. What the coming month will look like remains to be seen. "There is always less production in the summer. The best thing is to find the right balance between production and consumption. Slightly more demand than supply causes higher prices. The way it's looking now, we will be around the costing price over the coming weeks, but this remains difficult to estimate."
