Vision on Food spotted these trends at Fruit Logistica

During Fruit Logistica 2016 Ammerlaan Vision on Food, a bureau for innovations in the agrarian and food sector, spotted various trends. These ones stood out the most: 

Ice cream and frozen pulp of 'super'fruits without sugar from Brazil 
Well known ones, such as the açai berry, but also lesser known such as the cupuaçu. Probably soon to be found in the Netherlands.




Mushrooms with natural vitamin D from the Netherlands
The mushroom develops the vitamin itself through the Banken company from Limburg's old fashioned growing techniques, in which the mushroom is under light for a period.



Pink lettuce from Italy from the radicchio family.
 
This character full lettuce with a light bitter flavour is ideal to give the now slightly deflated (cut) lettuce category a kick.



'Rose' lettuce, also from Italy. Also from the radicchio family. Slightly bitter and so visually attractive that it gives the fresh lettuce head section a lot of power.



Giant radishes from Limburg. A combination of colour and up and coming taste trends - bitter, sharp, structure - in an almost forgotten product. The company Sous Fresh puts together a box each month with special products. Specially for top chefs. They inspire cooks and teach the company what is and isn't (yet) catching on. Experimental trend research - also a new trend.



Tropaeolum tuberosumnol or in English 'mashua' is like radish in flavour, but has a lot more complexity. If you want to taste it you will have to go to the Middle East, as BeFresh mainly sells this tuber to those countries.



Mini beets in all colours
 aren't new, but are the ultimate example of the trend in small vegetables and colour.



Red kiwis, another example of colour, not on the market until this autumn, so no idea what they taste like.



Mini apples belong in the - present everywhere at the fair - trend of anti food waste. Here they are packaged in threes as a snack.



And finally you also find trends in the bin! So these kinds of snack carrots are no longer in favour!?
