The first Spanish Yuzus will arrive at BUD Holland on Friday. This originally Asian citrus with the size and shape of a mandarin has a delicate, lumpy and often loose peel. The fruit contains a lot of seeds and little, but sublime, juice.
"The flavour of Yuzu is reminiscent of a herby lemon with a hint of mandarin. Some also recognise grapefruit, musk or pine. A complex flavour, that chefs love. This product will be global," says Patrick Stoffels. "The juice is used to prepare fish and meat dishes, gels, mayonnaises, vinaigrettes, soups, sauces, in cocktails and desserts."
"Our supplier started exporting Yuzu fruit from Spain last year. At the moment our supplier has 8,000 Yuzu trees. We are this supplier's exclusive seller," says Patrick Stoffels. "Last year experts from Japan visited the plantation and compared to Spanish Yuzu to the Japanese. They said the Yuzu was of the same quality."
BUD expects the season to continue until January. "The expected supply will be a lot larger than last year," concludes Patrick.
