'Short fries are healthier'

Eat short fries! That's the outcome of studies reported on by German magazine 'GEO' in its September edition. Because in order to meet the currently very high demand for extra long fries, the soil has to be fertilized longer: the thick potatoes need more time to grow, overly exhausting the soil, German website Gabot.de reports.

That increases the amount of nitrates in the tubers, the soil and the groundwater - especially because there's hardly any time left to plant crops on the fields in between, that would extract the nitrate from the soil again. The problem is concentrated on Prince Edward Island, where the largest Canadian potato producers have their fields. The nitrates even enter the Northumberland Strait in large quantities. For this reason, not eating XXL fries would be better for the environment, and healthier too.
