Asparagus preserves and aromatic herbs obtained with artisanal methods

Taking care of the entire chain from cultivation to harvesting and processing helps guarantee genuineness and traceability, which are essential for safe and healthy nutrition. This is the philosophy behind Macara®, the brand of Azienda agricola Iacona SS, a company specializing in dried aromas and asparagus preserves located in Mirabella Imbaccari (CT), Sicily.

With the acquisition of the ISO 22005:2008 and FDA certifications in 2023, the company can now interface with safety and professionalism on the domestic and foreign markets. Commercialization is through the retail, H&R and distribution channels on the national and European territory. The company also recently started selling to the US. The production process focuses on maintaining a high quality standard in order to guarantee raw materials that are monitored and processed with artisanal quality. Every product is handled following the typical methods of the Sicilian artisanal identity, with the support of modern and innovative machinery.

The processing of asparagus, based on a seasonal cycle and using fresh produce, is carried out preserving the organoleptic qualities of the product and enhancing them with non-invasive cooking processes typical of the Sicilian tradition. A maximum of 24 hours pass from the arrival at the company and the complete packaging, so all the fresh and natural flavors of the seasonal vegetable are trapped in the jars. The peak period is in May when the high temperatures, particularly accentuated in Sicily, convey a particular green color and deep flavor. Various types of versatile products are obtained, to be eaten directly or used in various dishes.

Part of the company's production process focuses on the production and processing of aromatic herbs. The leading product is a local variety of dried oregano. Management of the fields is carried out manually. A few hours after the complete drying in June, the product is processed into the various formats destined to different uses. A line of "aromatic salts" is also obtained, where the flavor of the Sicilian salt is combined with the deep aromas of the herbs.

All products are processed directly at the company facility. Volumes for 2023 reached around 95,000 branches and 30,000 jars. An increase is expected for 2024. The dried herbs are available in multiple formats: glass and pet jars and plp bags. The leaves are also available in larger formats for uses other than consumption.

Preserves are available in 212, 314 and up to the 3100 ml format in both olive oil and water.
