"Ready-to-cook chanterelles enjoy growing popularity"

The chanterelle season has begun just in time for Pentecost. Uwe Niklas GmbH has already received its first deliveries from the Balkan countries. "The freshly arrived chanterelles from Serbia impress with their high quality and variety. They are already available in various sizes – from small, sorted goods up to 30 millimeters for delicate dishes to unsorted goods for creative preparations. Ready-to-cook chanterelles are enjoying increasing popularity," says Lisa Niklas, junior manager of the company.

At the start of the season, entry-level prices are roughly on a par with last year. "We recently had chanterelles from Morocco, which were also available in good quantities. In this respect, there has been a fairly seamless transition this year," confirms the management of the family-owned company.

Practical packaging sizes are available especially for wholesalers, in particular 1-kilogram baskets and 3-kilogram crates. "For food retailers, we mainly offer wild mushrooms in handy small packages," says Niklas. "Demand is already very good at the start of the season, and we are noticing that both wholesalers and retailers are delighted that Balkan chanterelles are back on the market. In addition, mixtures with other mushroom varieties, such as king oyster mushrooms and shimeji mushrooms, which are also in high demand as single varieties, are very popular with consumers."

Uwe Niklas GmbH is currently waiting for the summer harvest of porcini mushrooms, which, like chanterelles, are among the most popular wild mushrooms. "We have also had morels from the Balkans recently, although the season there is now coming to an end. We will then source them from the USA. St. George's mushrooms and fairy ring mushrooms, on the other hand, are still available from the Balkans. Later in the season, we will also offer Caesar's mushrooms, hedgehog mushrooms, and other wild mushrooms," she concludes.
