Fresh Mushroom Europe (FME) has a new addition to its assortment. "We successfully introduced the Cordyceps and Royal Chestnut; now we can add another very nice mushroom to our range: the Dragons Claw," says this Belgian company's Luc van den Aker.
This mushroom somewhat resembles mouse claws, to which it is sometimes referred. "Locals, however, call it the Dragons Claw mushroom." It is described as tasting tender, crunchy, and refreshing. "With a pleasant aroma," Luc adds. Plus, because they are healthy, mushrooms are becoming increasingly popular.
"Its structure and shape are different from what we're used to, so innovative chefs can have fun with this new variety." FME is always looking for novelties, and with its mushrooms, it wants to focus mainly on the higher-end hospitality segment.
"We want to keep surprising our clients and always deliver beautiful products. We recently introduced the Royal Chestnut and Cordyceps in the Netherlands and Belgium, and there was definitely good demand for these. Chefs love experimenting with new varieties. The Dragons Claw fits in nicely with that. We've received the first kilos and are excited to see if this one catches on, too," Luc concludes.
