Butternot project wins the Ecotrophélia France competition

The Butternot project has won the golden Ecotrophélia France prize, Ecotrophélia France Innovation Fruits and Vegetables prize and the "People's Choice" awards.

During the final of the Ecotrophélia France competition which was held on June 24th, 2021 in Nancy, Georges Daniel, president of the Fruit and Vegetables jury, gave the prize awarded by the Interprofession of Fresh Fruit and Vegetables to the Butternot project proposed by students from ENSAD, ENSAIA and FMA. With their product, a “naturally fat-free and vegetable-based alternative to butters and margarines for sandwiches and other preparations”, the team won the golden Ecotrophélia France prize and the “People’s Choice” award.

For this 2021 edition, under the theme of “healthy, pleasurable and affordable food”, the Butternot project stood out by winning 3 great prizes. Presented as a naturally fat-free alternative to butters and margarines, their product “makes your sandwich lighter and reduces the calorie content of your preparations by up to 42% while remaining delicious.”

With its buttery flavor and melting texture, Butternot was designed to be spread on a nice slice of fresh bread or to be incorporated to cake, cookie or crepe batter… It is an entirely plant-based product with 80% of the vegetables from France, rich in fibers and with a Nutri-Score A. Butternot contains no allergens and is environmentally friendly with its Eco-score A. This product will be available in the butter section at local retail stores and keeps in the fridge for up to 7 days after opening.

The students, recipients of 3 awards, won the jury over with their innovative project. Their goal? “To replace butter by offering a ready-to-use preparation made from zucchinis and butternut squash and 80% of mashed French vegetables.”

Georges Daniel, president of the Fruit and Vegetable Innovation jury, claims to be impressed and very proud of this result. “The level keeps going up each year, and I am very pleased to see that these young people understood what innovation means. The product rewarded today is audacious. It does not exist yet and it meets societal demands. Butternot offers a new way of consuming fruit and vegetables, and that’s what we were looking for. All these young people have won, and the sector has won.” 

Rémi Langlois, producer in Cosnes-et-Romain (Meurthe-et-Moselle), was also a member of the Fruit and Vegetable Innovation jury this year. “I was very happy to be part of this great adventure for the first time this year! Today, I saw passionate young people, coming from everywhere in France, who want to honor fruit and vegetables in all their forms. Whether they focused on taste, pleasure or health benefits, I was impressed by the diversity and richness of the various projects. Butternot won because it represents a great innovation in itself and I congratulate the team who succeeded in convincing us all. With its light chestnut taste, I was even able to find in it the flavors of my childhood. Well done and thank you all for this wonderful experience.”

Among the 22 projects presented at the competition, the technical jury had selected 5 other teams to present their product to the Ecotrophélia Fruit and Vegetable Innovation jury:

Les Barr’oudeurs-DuoCalés, a balanced nomadic meal made of 3 delicious textures with cereals, vegetables and legumes in the shape of 2 bars.
D’Roll presented by the Globe-Croqueurs team, a healthy and delicious snack preventing the symptoms of kinetosis (motion sickness) in children, with its combination of ginger and apple-banana puree, as well as an edible cracker-straw.
Hémissfer, an organic “smoothie” rich in iron, made with algae combined with fruit such as apples, pears and kiwis to help prevent anemia in women.
Les Past’à curieux presented by the Lég’Gloutons team, a colorful paste and filling made of vegetables with no coloring agents or preservatives, and with more than 53% of vegetables.
Légum’envie, a vegetable drink designed for a balanced snack, bringing the recommended but often neglected daily dose of vegetables.
