Italy: Five new shoot mixes

Now that winter is over, people tend to favor summer products and shoots are certainly part of this category. Vivo introduces three new mixes developed by chef Debora Fantini, who is also part of the Italian national chef federation.

"We have thought about organic and traditional mixes that, in summer, can be a valid alternative, or excellent paired with a main dish. All shoot mixes are produced by us at Vivo and only derive from seeds and water," explains Andrea Farnedi.

The new organic mixes

The first mix is Mediterraneo Bio, made up of red cabbage, mustard, alfalfa and rocket. It is perfect paired with grilled or barbecued meat thanks especially to the mustard shoots, while rocket and red cabbage create a balanced slightly-spicy flavor. It can also be used to make vegetarian dishes unique. 

"The second mix is Super Tasty Bio with red, Daikon and China Rose radishes. It is perfect for pasta and rice salads. A few grams are enough to radically change the flavor of a simple salad."

The third mix is Vegameat, made up of Mung beans, Azuki red beans, peas, chickpeas, red and green lentils and wheat. It is perfect as a protein supplement in a vegetarian or vegan diet. The mix can be eaten raw to add some crunchiness to soups or sauteed as a side dish. 

"We also have two traditional mixes - Pinzimonio with red radish, carrot, onion and fennel is perfect for summer salads, sweet or soft cheeses such as caprino, mozzarella, robiola or caciotta. It is best enjoyed with extra-virgin olive oil, salt and a few drops of balsamic vinegar."

Finally, the mix Gran Gourmet is made up of leek, alfalfa, beetroots and fennel. It is ideal with fish entrees or steamed fish flavored with citrus zest. The light aromatic flavor also makes it suitable for summery seafood salads and fresh antipasti.
