Mexico: Sausages made from fruit and vegetables

The Center for Food Investigation and Development (CFID) is working on a project to make healthier sausages, enriched with fruit and vegetables, to eliminate fat and starches.

With this project they hope to combine meat, an excellent food for protein, minerals and vitamins, and fruit that offers natural sugar, anti-oxidants, fibers and omega 3 oils.

Presently, they make sausages with plum, broccoli and nuts.
