Forgotten vegetables will save the world
Large-scale production of little consumed fresh produce can make the worldwide food system more environmentally friendly, nutritious and flexible. According to the Food and Agricultural Organisation (FAO) of the United Nations, at least 12,000 edible crops are known. Still, we grow at most thirty of those on an industrial scale, with rice, corn and grains together making up no less than 60 percent of all calories consumed by the global population.
