Three lines: snacks, dehydrated vegetables and creams

With Cavoloso! brassicas are even more appealing

"Enhancing brassicas to be more appealing, especially to children, is the mission of our startup Cavoloso!" said Antonio Vagnoni, Valentina Visciglio and Francesca Biondi at Sana 2022.

The project, born in late 2019 and officially presented at the Taste show in Florence in March 2022, has developed upon the prompting of Agrinovana, already engaged in the commercialization of brassicaceae, to enhance the agricultural supply chain by processing the products. The Agrilella cooperative managed the entire initial research and development phase.

"Currently, three lines are in place. Gli Sfizi, cauliflower and chickpea snacks in three variants (two savory options and a sweet version); Le Cremose, vegetable creams; and Le Foglie, naturally dried vegetables (kale, cauliflower kernels, turnip greens). All products are preservative-free, gluten-free, lactose-free, no added sugar, and no palm oil," continued Vagnoni, Visciglio, and Biondi.

The current production involves small volumes and is handcrafted in Agrilella Cooperative's laboratory.

Cauliflower and chickpea snacks are available in tomato and paprika, rosemary, and dark chocolate and coconut variants.

"The Le Foglie line is dried at low temperature with a computerized machine that allows us to control both the temperature and humidity parameters. For the Gli Sfizi line, the dehydration process has been patented. Cremose, on the other hand, are creams made from fresh vegetables," explained Vagnoni, Visciglio and Biondi.

The snacks and dried vegetables were also featured in Sana Novelties.

"Visitors at the fair really appreciated this out-of-the-ordinary idea of transforming a vegetable, not exactly loved by everyone, into tasty and original references. There was a lot of curiosity around our lines."

Cavoloso! was created with the intention of boosting the entire farm production, using harvest surpluses and thus avoiding any unnecessary waste. "The vegetable raw materials are all derived from direct collaborations with local farms," emphasized Vagnoni, Visciglio and Biondi.

The Cavoloso! lines are handcrafted for Agrinovana, which embraces zero-waste as its philosophy. Currently, Cavoloso! products are offered to the public through e-commerce at www.cavoloso.it while B2B marketing is directly through Agrinovana.
