According to data from the Ministry of Agriculture and Rural Development, Mexico produced 126 thousand tons of eggplants in 2021, i.e. 14 thousand tons more than in 2020; one of the most outstanding growths in the country's vegetable production. In the last decade, this vegetable has had an average annual growth rate of 32.1%. Mexico exports this vegetable to multiple destinations: Germany, the United Kingdom, Canada, the Netherlands, Switzerland, Luxembourg, Italy, Cuba, and its main market: the United States.
In 2021, Mexico produced 596 thousand tons of broccoli, i.e. 2.2% or 13 thousand more tons than in 2020.
Cauliflower production remained at around 100 thousand tons and green tomato production increased by 2.6%, going from 767 thousand tons in 2020 to 787 thousand tons last year.
