France: the endive production is gaining ground in the Ariège department

The Hauts-de-France region supplies 95% of the French endives, but a growing number of producers in the Ariège area are starting to cultivate them as well, as a way to diversify and also keep their seasonal workers in the winter time. 

Seeing the success of a producer who has been cultivating endives for 15 years, the Chamber of Agriculture decided to encourage other producers like Samuel Dezileau of the GAEC “L’attraction Terrestre” who started his endive production five years ago. He currently produces nearly 5 tons of endives and his prices are aligned with those of the north of France, at 8 euros/kg [9.1 USD/kg].

The roots are placed in crates, in the dark, at a temperature of 18°C. They are harvested three weeks later.

In total, 6 farmers produce endives in the department and others will start next year.
