New organic white kale variety launches

Baldor Specialty Foods has introduced a new sweet-flavored produce item: organic casper baby kale.

The kale has a sweet taste and crispy texture and is a variety of deco kale that likes to grow where there is cool weather. Casper baby kale is offered from Baldor Foods and hails from County Line Harvest, an organic produce farm with two locations in California: one in Petaluma, Marin County and one in Thermal, Riverside County.

The kale starts off green and as it matures, the color develops and spreads from the veins into leaves and ultimately ends up as a white/creamy leaf edged with green tips. When grown, County Line Harvest takes tender center pieces from the full head and puts the baby kale in a 3-lb. box which is available for $34.99. The kale can be prepared the same as other types of kale and will be available year-round.
