Polish producer of fruit salads Fructofresh receives patent for German and international market

"We offer a solution for the production of fruit salads and mono-products with extended shelf life"

Just in time for Fruit Logistica in Berlin, the Polish producer of fresh fruit salads Fructofresh has managed to patent a solution for extending products' shelf lives. With this process, the shelf life of Fructofresh fruit salads and mono-products can be extended. The company, based in Gubin in western Poland, supplies handmade fruit salads and mono-products to the German catering trade, as well as to retail and wholesale customers. In Berlin, Fructofresh will present an extract from its wide range of convenience products to the trade public. 

Fructofresh has been supporting European retailers with modern and surprising fruit ideas for many years. Since the company was founded in 2004, it has been very successful in all European markets, including neighbouring Germany. "Our fruit salads and mono-products are aimed at individual consumers, self-service shops, supermarkets, grocery stores and Horeca. All our products are handmade and give the fruits a natural and fresh taste, as they contain no preservatives," said the management.

Long-term work and solutions that extend durability
Convenience products have a major disadvantage: the shelf life is relatively short because the fruits contain a rich bacterial flora. This bacterial flora has a negative effect on the quality of fresh, peeled and pre-cut fruit. "The aim of our patent solution is to prevent secondary microbial infection of peeled and sliced fruit at any stage of production technology without microbiological sterilization and without commonly used preservatives," says the CEO of Fructofresh.

First, the fruits to be used are washed with water and steam. The next stage of the production process is manual peeling and cutting. Knives and cutting boards are regularly washed and disinfected while peeling and cutting is done continuously. The waste produced during peeling and cutting of the fruit is continuously removed outside the production hall to prevent the proliferation of microbial bacteria.

Gentle packing and packaging
Immediately after peeling and cutting by hand, the fruit is cooled down so that the microbiology on the surface of the cut fruit is stopped naturally. After mixing fresh fruit salads and mono-products in the right proportions, the fruits are packed by hand.

"Fruit mixes and mono-products are packed in clean and dry plastic containers and then filled with infusion. Products that are to be packaged without infusion are packaged using MAP technology in sterile trays with different capacities," Fructofresh's management explains.

The process of packing and packaging takes place in the "Clean Room", where very strict hygiene regulations apply. The appropriate temperatures of the technological process are maintained under the conditions of laminar air flow, which is cleaned with special HEPA filters. "Finally, our convenience products reach the respective customer in accordance with strict technological procedures and hygiene regulations. We rely on our in-house refrigerated transport to maintain the cold chain, which is so important for fresh products".
